When most people think of salad, they probably don’t think “this salad is good but it is filling!”* FALSE. I throw together this salad when I run home to lunch from the office and usually bring it back with me; it’s so satisfying, I’m set until dinner!
- Small mixing bowl
- Two handfuls of greens (I happened to have some organic mixed greens in the fridge)
- Strawberries, cut up (I used 7 medium)
- 4 oz chicken or steak
- 2 T walnut pieces
- 2 T Gorgonzola cheese
- Balsamic vinegar
- Olive oil
- Juice from one lemon
- Homemade croutons (optional)
Mix all together in the mixing bowl. For the olive oil, pour one-Mississippi, two-Mississippi. For the balsamic, pour one-Mississippi (or, if you’re like me and love balsamic, two). Super easy, healthy, flavorful, and filling!
